Using our Terracotta Cookware- One Pan Sausage and Seasonal Veg Roast

Hey guys! This week we have another delicious recipe for you, this time using our lasagne dish.

This recipe could not be easier and it’s super simple to alter to suit you and to adjust the quantities for as many, or as few people as you need. It’s a lovely Winter warmer and a definite crowd pleaser!

You can change the sausages to your preference and use pretty much any seasonal vegetables you can find locally to you, but it’s also great to use up things you already have in your fridge or freezer.

Serves 3-4 people

Products used

 

Ingredients 

  • 6-8 sausages
  • 3 beetroots
  • 4 parsnips
  • 1-2 small squashes
  • 2 onions
  • 2 cloves of garlic (or more if you want)
  • 2 sprigs of fresh rosemary
  • 2 sprigs of fresh thyme
  • salt & pepper
  • olive oil

Method

  1. Pre-heat the oven to 180 degrees centigrade (or 200 if not using a fan oven)
  2. Wash your vegetables.
  3. Chop you root vegetables into medium sized wedges, you can peel them first if you wish but we like to leave them on most of the time for the extra nutrients.
  4. Peel and chop the onions into quarters.
  5. Chop your squashes in half and scoop out the seeds before chopping them into slices. Once it’s cooked you can easily remove the skin, or you can eat it for a bit of extra fibre (but you may not want to if the skin is thick because it might be a bit tough.)
  6. Put all the veg into the terracotta lasagne dish or another oven proof dish, drizzle with olive oil and season with salt and pepper before mixing together with your hands or a spoon to make sure the oil and seasoning is evenly distributed.
  7. Place the sausages on top of the vegetable mix.
  8. Strip the leaves of the herb sprigs and sprinkle over the top.
  9. Pop in the oven for 20 minutes, take out, give the tray a quick shake and flip the sausages before putting back in the oven for a further 20-30 minutes, until the sausages are brown and crisp and the vegetables are tender.
  10. Bring straight to the table and serve. You can add gravy or any condiments you like! We think mustard works well.
